Creamy Gnocchi with Kale (And How I “Cook”)

I like to think of myself as Jason’s muse in the kitchen. I take inventory of the fridge then come up with tasty (hopefully) (in my mind they sound tasty) ideas for different dinners. Then I have him execute the actual “cooking” part of my ideas. Tonight was no different.

J had bought a couple packages of gnocchi at Trader Joes a while back and on a whim we had picked up some kale at the produce market last week. The kale was actually totally inspired by my friend Jocelyn who has an entire Pinboard devoted to her love of kale. It’s pretty awesome. I hadn’t gotten around to using it yet so I figured it might go well in some sort of pasta dish. And oh boy did it go well.

And now… drumroll please… I present my very first recipe*.

Creamy Gnocchi with Kale

1 package of gnocchi pasta

2 heaping handfuls of kale – cooked and drained

1 onion – chopped

1 yellow pepper – chopped

2-3 tablespoons garlic

3/4 cup of ricotta cheese

1/4 cup low-fat milk

salt to taste

crushed red pepper

Sauté peppers, onions and garlic in a little olive oil until onions are soft. Add kale, a couple tablespoons of water to steam, and salt. Cook until kale gets super green and onions and peppers smell delicious. Add ricotta cheese and milk and stir until it’s all melted. Toss in cooked gnocchi and red pepper if you like a little kick. Cook until cream sauce coats gnocchi. Serve alongside a big glass of good wine and enjoy.

*I use the term recipe loosely as no actual measuring took place while J whipped this up so all measurements are total guess-timations. You may need to adjust based on your preferences.

It was SO good. So so good.

Now Jason is currently flipping between The Voice and the Kings game while I do what I do best – drink wine and blog/browse pinterest.

And snuggle with my new favorite pillow from World Market that Jason doesn’t think matches the couch. The couch is brown. The buttons are brown. It matches. I made sure to cut the tags off right away so I could keep it.

St. Pat’s Day, Race Swag and the Most Random Meal

Last weekend it rained. And I ran.

IMG_3149

And my ponytail legitimately multiplied. I wish my hair had that much volume on a normal day… but without the frizz, sweat and flyaways.

I had to get in my last good run before this Saturday’s half marathon because I when I opened the fridge I realized that no running would be happening on St. Patrick’s Day.

IMG_3158

I drank one of those Harps but it was kind of nasty. I also had two green Bud Lights at a local sports bar. One was free. I was with this guy so I don’t even know how that happened:

IMG_3174

He had a little more beer than I did Winking smile

He also cooked a jammin’ corned beef while Jennifer and I whipped up the mashed potatoes and cabbage. It’s all about teamwork.

Jennifer and her husband Mat

Tiffany and Aaron – Tiff walked out of the sports bar with beads. I don’t how that happened either (FYI it’s a family style sports bar and children were there so I am totally kidding).

This week has been crazy busy. We went to see NEEDTOBREATHE at Club Nokia on Tuesday (amazeballs of course), Wednesday I got my hair trimmed, and today I went to the Great Race of Agoura expo to pick up my race packet for Saturday’s Pacific Half Marathon. The expo was surprisingly packed considering I went on my lunch hour. It also looked like a Real Housewives of Calabasas convention.

I know Taylor, I make me laugh too.

So I picked up my swag and checked out a couple of the booths, snagged some free bottle of FRS energy drinks and had to jet back to work pretty fast. Check out my loot:

IMG_3199

The technical shirts are really cute and I LOVE the bag everything came in. I have one of those drawstring bags I got for free in college that I carry my gym clothes in and it’s definitely seen better days. This one is much bigger, thicker fabric and has the Great Race of Agoura logo embroidered on it. Welcome to your new home gym clothes.

And now, without further ado, I present to you the most random (yet totally delicious) meal of the week:

IMG_3196

Clockwise from the top, we have homemade pizza with pepperoni and ricotta cheese, leftover mashed potatoes and corned beef and cabbage, and the best brussels sprouts (and my first successful cooking attempt) ever. All topped off with a delicious glass of pulpy orange juice. But really, it hit the spot. I think J and I are going to start these traditional “clear the fridge” nights because when you’re paying for all your own food it makes it hard to throw out anything. (Don’t tell but I think J was using the milk like 4 days past expiration).

So Saturday is Half Mary #2 and next Sunday is #3. Hopefully it all pans out well, but one thing I can guarantee is that I’ll have a great chance to review my new Pro Compression socks on Saturday afternoon!

Anyone running any races this weekend? Which ones?

What’s the most random meal you’ve eaten recently?

Goodbye 2011

Yesterday – ran 2.84 miles in 28:40. Today – hitting the gym eventually 🙂

I can’t believe 2011 is over! I hope everyone has fun plans to ring in the New Year. We’ll be heading to this for the night:

Sorry I had to 🙂

Actually, J and I are going to dinner with Jodi, Casey, Misha and her BF Stefan at this delish Italian restaurant that’s owned by Fabio from Top Chef. I’m having serious trouble deciding between Butternut Squash Ravioli or Pesto Gnocchi.

They even have a champagne toast at midnight! But because I’m not big on patience, I picked up my favorite $6 almond champagne from TJs thinking we can start the champagne-ing before dinner. We’re going to do apps, drinks and hair styling (courtesy of Jodi’s amazing skills) before dinner then head out for a late night. This weekend will mark 2 nights in a row of me staying up past 12 – incredible!

I hope everyone has an amazing, fun and safe New Years! Don’t drink and drive, don’t drink and text, and have a great end to 2011 and an even better start to 2012!

What are you doing for New Years?

Lions & Tigers & Garmins

I hope everyone had a wonderful Thanksgiving and survived all the craziness of Black Friday weekend!

I had THE BEST Thanksgiving/Birthday weekend EVER! It started with the usual fun of Thanksgiving, which included massive amounts of food and pie:

I had to include my delicious Mimosa… some people drink wine with their Thanksgiving meal but I say there is nothing wrong with 5:00 pm mimosas.

We had so many people at our house to celebrate, it was great! I parked myself on the couch where the men were all watching football and after about 7 minutes of trying to be interested, I pulled out my current Harry Potter book and spent most of the day reading and having my sisters bring me more mimosas.

Friday was my birthday and I have to say that if my 25th year turns out to be as great as my first weekend then I have a lot to look forward to. I avoided Black Friday in favor of sleeping in and having one of my dad’s famous omlettes for breakfast. My family showered me with some incredible birthday gifts including candles and lotion of Bath & Body Works, a cute tank top that I already got to wear thanks to our 80* weather, some awesome new pink Nike running apparel and GORGEOUS diamond hoops. I felt SO spoiled!

Jason came over as we were finishing breakfast. We had plans to go to the LA Zoo because I’m really 5 not 25, and all I wanted to to go see large cats up close and personal. He totally surprised me with another amazing piece of jewelry:

A Garmin Forerunner!!!!

I was SO surprised – and so excited I wanted to wear it to dinner later that night 😉

After reminding me that the animals were waiting and I could take the Garm on a run later, we set off for the zoo. I’ll just let the pictures do the talking here because I took about 700:

After the zoo, we tried stopping at Portos Bakery for lunch (best bakery ever!), but unfortunately it was closed for the holiday weekend. We settled on a sandwich place in the valley on the way home and after I got us a little lost, we finally ate lunch then headed home to relax a bit before the next part of my birthday extravaganza.

Birthday fun part 2 coming soon!

Did you do any Black Friday shopping?

What’s your favorite animal? I LOVE tigers. I think we spent 15 minutes watching the tiger walk back and forth while I took about 57 pictures of him. So beautiful!

Turkey Pants

This morning my Dad and I braved the impending storm (and I did the impossible and woke up at 6:50 on a weekend morning) to get in a long run. The Holiday Half is only 3 weeks away and with Thanksgiving, a Turkey Trot and my birthday taking place next week along with all the Black Friday and Cyber Monday prep happening at work, I know the days are going to fly by.

We ran 9.27 miles in 1:40. It was cold and so windy but luckily the rain was nothing more than a light mist during our run. I was glad that I decided to wear a jacket and grabbed some a fleece earwarmer headband that I snagged at Target a couple weeks ago.

It was super nice running with my Dad. I didn’t use my iPod and it made time fly by a lot faster than being stuck inside my head with own crazy thoughts about what I’m getting myself into with this whole running thing.

I also got the chance to try out my newly purchased SpiBelt.

It worked so well I actually checked a couple times to make sure it was still on because I couldn’t feel it at all. My only complaint though, is I came home and started feeling the sting of a nasty bruise in the small of my back. I’m not sure if my Dad’s Blackberry that I carried in the SpiBelt was bumping against my back the whole time or what, but it definitely hurts right where the pack was. Other than that, I love it. It didn’t bother me once during the run and I can deal with a bruised back for a couple days if it means I get to run without carrying my phone and Gu Chomps and Nuun and debit card in my hands.

Although I am really hoping to run the half marathon in a faster pace than we ran this morning, I’m pretty pleased with how I felt today. Especially considering that my fueling last night looked a little like this:

Salt & Pepper Fries w/ Ale Ketchup & Garlic Aoli

Curried Chicken & Apple Salad / Mac & Cheese w/ Salt & Vinegar Crust, Jalapenos & Bacon

Unpictured: Ladyface La Blanche Wit and many bites of smoked apple duck sausage and bratwurst.

It was a good night chauferring these guys:

Will was super offended that I thought his shirt was a picture of Chuck Norris.

I do think they were a bit disappointed that the Danica Bus stopped running at 10:00 last night. They should have joined the party that rolled up in this beast:

Now I’m off to go find myself some Turkey Pants to get ready for Thursday’s festivities.

What are your best pre-long-run fueling tips?

Anyone else doing a Turkey Trot?

What’s your favorite Thanksgiving dish? I love the stuffing, apple and pumpkin pie and this super yummy broccoli dish we have. Also, my aunt’s creamed corn is pretty famous in the family and I usually reserve an entire bowl for it.

Weekend Recap

Just got back from a great 3.28 mile run with Tiffany. I finally got around to purchasing one of those c9 babydoll tanks from Target (clearance!) and wore it tonight. I need to go buy 8 more, like, now.

Where did the last 3 days go?? Seriously… the weekend goes by way too fast. Here’s what I’ve been up to:

I was SO disappointed that this garden gnome costume didn’t come in a size XXXL because I REALLY wanted it. I bet you think I’m kidding, but I couldn’t be more serious.

Megan and I met up for Happy Hour at Elephant Bar. $6.50 for a veggie burger, sweet potato fries and a beer. Can’t beat that.

And a shout out to Megan since you told me you read this… I need to start an extreme couponing page for you.

Baked these cookies, but subbed the spice cake mix for devil’s food.

They may not look pretty, but they tasted SO good.

Jason cooked an amazing dinner of Thai Peanut Chicken over rice. Recipe coming soon!

I helped by cutting and eating a delicious honeydew melon, but apparently there is a wrong way to cut melons because J took over partway through.

On Saturday we went to Jodi’s parents house to enjoy the beautiful weather and celebrate Casey’s 26th birthday!

Jodi and Casey

J and I

I was too busy scarfing down the amazing feast of smoked pulled pork, pasta salad, coleslaw and BBQ beans to remember to take a picture, but believe me, it was amazing.

Sunday was spent cleaning my highly disorganized room and throwing out 63 tubes of mascara. Then, J and I walked around Home Goods and Bed Bath & Beyond to get out and kill some time looking at giant clocks and glittery Halloween decorations. I also decided that one day I will need one of these:

A DONUT MAKER! So necessary in my life.

This morning I felt a little under the weather to I had to make an Emergen-C cocktail and follow it up with a salad beast for lunch:

Oh and I totally took about 18 self-timer pictures of me with my salad while sitting in the Gelson’s parking lot only to look up and see a car full of old ladies watching me. It’s cool though, I know all you bloggers understand.

How was your weekend? Do you ever get weird looks from people for taking a million pictures of your food? No, just me…?

Crash & Burn

I’m putting all my money on the title of this post being a perfect description of my day. Let me explain – every Friday my office has donuts and bagels for breakfast. Monday – Thursday I try to eat a filling and healthy breakfast like an egg sandwich, peanut butter toast or oatmeal, but on Friday’s I let myself indulge in a special treat. I usually go for the bagel with some peanut butter or light cream cheese, but occasionally one of these ends up in the little pink box and I just can’t resist:

The good news for me is that this is actually a rare occurrence. Normally there are NO sprinkle donuts in the pink box. And normally we all sit around our cubes complaining about the lack of sprinkle donuts and over-abundance of glazed donuts and apple fritters.

Well this morning, one of my coworkers brought in an entire box of sprinkle donuts for our team. YES! I had one, then a quarter of one, then a half of one. I think I was in some sugar-induced frenzy because I could. not. stop. And they were delicious.

Now, however, I am super antsy. Cannot sit still. Can’t focus on one thing at a time. And I have a client phone call in 10 minutes. This should be interesting. I guarantee that by 11:00 I will be lethargic and grumpy and in major need of the carrots and hummus I grabbed on my way out this morning. And maybe I will have learned my lesson about too much sugar too early in the morning.

Do you crash and burn after too much sugar? What’s your favorite breakfast treat?

– My FAVORITE breakfast treat is a big, fluffy waffle with berries, syrup and cool whip.

Don’t forget – I’m picking a random winner for my first giveaway at noon today!
